Prepare Stuffed Brinjal

Basically this is a south Indian preparation done in the Godavary districts of Andhra Pradesh.

Ingredients

  • 250 gms of Brinjal, preferably round and of small variety
  • 1/2 spoon of oil
  • 2 spoons split black gram
  • 1 spoon jeera
  • 4 or 5 red chillies
  • 1/2 spoon Bengal gram
  • Some fenugreek seeds called methi
  • 1 spoon dry coriander

Steps

  1. Take 250gms of brinjal preferably round and of small variety.
  2. Split into 4 keeping the stem intact.
    • Soak in salt water for ten minutes.
  3. Heat half spoon of oil and add 2 spoons split black gram .
  4. 1 spoon jeera, 4 or 5 red chillies ,little hing, half spoon bengal gram a little fenugreek seeds called methi,1 spoon dry coriander called dhania.
    • Fry them .
  5. And make it into a powder using a grinder.
  6. Remove brinjals from water and stuff the powder in them.
  7. Heat 4spoons of oil in the same thick fry pan again and put all the stuffed brinjals in them . Cover them with a saucer type plate and put little water on the plate.
  8. Cook for 5, minutes turn brinjals delicately and continue the process till they are done.
  9. Finally transfer to a bowl and serve with hot rice.

Tips

  • By soaking in saltwater, brinjals don't turn black.
  • Little water on the plate prevents brinjals from charring at the bottom and gives pressure cook effect . This process can be done to any curry (dish).
