Make Beetroot Curry in Andhra Style

Beetroot curry prepared in Andhra Pradesh is very different from curries prepared in the rest of the North Indian states. This article will show you how to make it.

Ingredients

  • 500 grams/17.6 oz of chopped and boiled beetroot
  • 2 tablespoons oil
  • 1 teaspoon salt
  • 3 whole and dried red chilies
  • 1 teaspoon mustard seeds
  • 1 teaspoon split white lentils
  • 1 teaspoon cumin seeds
  • 4 tablespoons grated fresh coconut

Steps

Frying the Ingredients

  1. Pour the oil into a large frying pan. Add the dried red chilies, mustard seeds, cumin seeds and white lentils. Sauté the ingredients for few seconds.
  2. Add the chopped and boiled pieces of beetroot.
  3. Mix the ingredients thoroughly. Add salt and mix well.

Infusing the Flavors

  1. Cover with the lid. Allow to cook gently for some time so that the flavor of the seasoning ingredients blend well with the beetroot.
  2. Add the grated fresh coconut and mix well.

Serving the Curry

  1. Garnish with grated fresh coconut before serving. Serve with rice or rotis.
