Make Pineapple Fritters
Pineapple fritters go well with most any meal. They can also be used as a special dessert or a quick lunch. They are simple to make, and can be prepared ahead, and fried when ready to eat. They can also be enjoyed cold the next day.
Ingredients
- 2 cups fresh pineapple, cut in chunks
- 1/2 habanero chili pepper or 1 jalapeno pepper, seeded and finely minced
- 5 chives, finely minced
- 1 onion, minced
- 2 cloves garlic, mashed & minced
- 8 green onions, minced
- 1/2 teaspoon turmeric
- 1 1/4 cups flour
- 1/2 cup milk, or more
- 1/2 cup vegetable oil, for frying
- 2 eggs, beaten
- Salt and pepper
Steps
- Mix the first seven ingredients in a bowl and it set aside.
- Combine the flour, milk, and eggs. Add the salt and pepper and beat well with an electric mixer.
- Put the mixture in a mixing bowl, and refrigerate for about 4 hours.
- Remove from the refrigerator, and combine the fruit and batter.
- Heat the vegetable oil in a deep skillet. When the oil is hot, slowly drop the batter in by spoonfuls, and fry for about 5 minutes, or until they are a golden brown.
- Remove fritters and drain on paper towels. Serve cold, garnished with pineapple chunks or rings, if desired.
- Serves 6.
Tips
- Use either chunk or tidbits pineapple. Or you can cut your own pineapple for complete freshness.
Warnings
- Never leave the room, until everything is completely finished, and the stove is turned off.
- Heat the oil in the pan, then lower the heat. When placing the batter in, it will spit, and if you are too close, you will get hurt as it will hit your face.
