Make a Watermelon Raspberry Jalapeño Salsa
Springtime brings with it warm breezes, sunshine, and outdoor and patio parties. No matter the occasion, you can delight your guests with this unique and tasty snack. This recipe makes approximately 3 cups.
Ingredients
- 2 tablespoons of vegetable oil
- 1 cup of fresh, chopped scallions
- 1 clove of fresh, finely-chopped garlic
- 1 or 2 minced seeded jalapeño pepper(s)
- 1 cup of fresh raspberries
- 1/2 cup of organic sugar
- 1 cup of chopped watermelon
- 8 ounces of light cream cheese
- Whole grain crisp flatbread or crackers
Steps
Making the Salsa
- Heat the oil in a saucepan over medium heat.
- Pour in the scallions, garlic, and jalapeños and fry until satisfactorily roasted.
- Reduce the heat to low and add both the raspberries and sugar to the pan.
- Bring it to a slow simmer and stir occasionally for about 5 to 7 minutes, then remove from heat to cool.
- Refrigerate the salsa in an appropriate container until thoroughly chilled.
- Stir in the chopped watermelon.
Serving the Salsa
- Place the cream cheese on a platter.
- Pour a serving of the salsa over the cream cheese.
- Serve with flatbread or crackers.
- Done.
